Chicken Lettuce Wrap Recipe

These lettuce wraps are one of C.J.’s favorite things. He actually requests these, which is the biggest compliment I could ask for. On top of that they are super easy and quick to make and are fairly healthy.

  • 2 chicken breasts
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chicken seasoning
  • 1 tablespoon garlic
  • 1 stalk of celery, chopped
  • 1 scallion, chopped
  • 1/4 large onion, chopped
  • 2 cups rice, cooked
  • Olive Oil
  • Salt
  • 1 head Iceberg lettuce, chopped in half from stem
  • Crunchy, rice noodles

  1.  Place the thaw chicken breasts in a ziploc bag, add soy sauce, garlic powder, chicken seasoning, and a dash of salt. Coat the chicken in this mixture. Store in the refrigerator to marinate for a few hours.
  2. Heat oil in a large skillet at medium high heat. Add garlic, brown, and then add chicken. Put the lid on the skillet. When the chicken is finished cooking (juices run clear) add the celery, onion, and scallion. Stir and let cook while the lid is off of the skillet. Stir occasionally to prevent burning. Remove from heat when the onions are translucent.

Assembling the lettuce wrap:

  1. Piece of lettuce
  2. Spoonful of rice
  3. Spoonful of chicken mixture
  4. Sprinkling of rice noodles
  5. Roll the lettuce to wrap up the food
  6. Enjoy!
