Caprese Salsa

This dish was inspired by an impromptu trip to Outback Steakhouse. They have a similar dish on their menu, we tried it, loved it, and then decided to try to recreate it at home.

I will say right now, that I enjoyed the dish I made at home a lot better than what we ate at Outback.

This recipe is SO simple and easy….and fresh. Did I mention that this dish is easy?

Oh, and it tastes so great. We ate it for a Saturday afternoon lunch. It was absolutely perfect.

The Outback version was served with bruschetta, but C.J. and I tend to enjoy softer bread, so I grabbed some focaccia bread from our bakery.

This dish would be great for a get together or potluck.

***Please note that this recipe is more of a list of ingredients rather than an exact measurement. Use as little or as much of each ingredient as you would like. You are going to eat it-make it so that you like it!

  • Fresh mozzarella (I used the pearls for convenience)
  • Tomatoes, diced
  • Fresh basil
  • Balsamic vinegar
  • Bread of your choosing

  1. Combine cheese, tomatoes, and basil together. Drizzle with balsamic vinegar.
  2. Cover and refrigerate for an hour.
  3. Serve with bread (I melted some parmesan and mozzarella cheese onto our bread using the broiler)
