This dish was inspired by an impromptu trip to Outback Steakhouse. They have a similar dish on their menu, we tried it, loved it, and then decided to try to recreate it at home.
I will say right now, that I enjoyed the dish I made at home a lot better than what we ate at Outback.
This recipe is SO simple and easy….and fresh. Did I mention that this dish is easy?
Oh, and it tastes so great. We ate it for a Saturday afternoon lunch. It was absolutely perfect.
The Outback version was served with bruschetta, but C.J. and I tend to enjoy softer bread, so I grabbed some focaccia bread from our bakery.
This dish would be great for a get together or potluck.

Ingredients
- Fresh mozzarella (I used the pearls for convenience)
- Tomatoes, diced
- Fresh basil
- Balsamic vinegar
- Bread of your choosing
Instructions
- Combine cheese, tomatoes, and basil together. Drizzle with balsamic vinegar.
- Cover and refrigerate for an hour.
- Serve with bread (I melted some parmesan and mozzarella cheese onto our bread using the broiler)
